Is it possible please, that when I hover over a main menu item, or the active item, that the text colour changes, rather than have the blue highlight box that appears at present?

Hello,
It can be done but it requires a css modification as the theme has no setting for this. The code is quite big though.
Add this in the theme panel-> custom css box:
