I would like to change the accent colour for each category. By this I mean I would like that the highlighting colour in the main menu as well as the headlines in the category itself would change. An example of this can be found on the http://www.huffingtonpost.com/section/politics website.

Unfortunately, our theme does not have any such an option that allows you to change the color for each menu items and for hover effect, like to your example above, sorry! Notice that it is not a simple task and the hover effect from the menu is a very complex part of the theme which required a lot of additional customizations that involves time-consuming and the time does not allow us to do these tasks at the moment, sorry!
If you want to display more levels in our theme and if you are not aware of the steps which are needed to take in this regard, please consider hiring a freelancer/developer to help you because we cannot provide custom work at the moment, sorry!
