How can I have all posts in a category called video have their post template automatically set for the style 8 video post template?

Yes, you should do this but only if you have the from panel set it into your templates, like this -> http://screencast.com/t/zHiFzTIki and then from this you can change your desired template for all your posts, like this -> http://screencast.com/t/D4w4DA6C
