Is it possible to categorize posts under the menu or is it only possible to categorize it under a certain category?

This depends on your menu. Posts are usually categorized by their category as this is the default taxonomy of wordpress. If you refer to a mega-menu, then you can only categorize them using the standard category. If you want to create custom menu items though, you can do it using the wordpress menus section

This is not what I mean. I want to post messages under the head pages. Now I have to make it a mega menu or place a category under my pages. I want that a customer can click at my page and there will be sort of text. Or click on recipes at my site and he will see all our recipes.

You can create a custom menu using the wordpress menus section and you can create a custom page showing the content you described to your users. Add it as a menu item so the user can clik it and lead to the specific page you want to show.
