1. I have installed desired demo. Before install I selected to install WITH NO content, however all content installed itself anyway. I don’t want to have any content as I want to have my own.

2. I would like to keep whatever I set up in this demo (with my content) and I don’t want to loose those settings and customization. What would happen if I want to try different demo? Will I lose that all after installing any other one?
3. Is it possible to have all settings and customization made in demo permanent? Exactly the same as in demo but without installing it, so it cannot be uninstalled?
4. I have noticed styles.css included in version 7.8 child theme has version 7.7c. Is that ok?

There seems to be an issue with the demo install process at the moment, and we are currently investigating this issue. If in the future you decide to uninstall a demo or use another one instead, all the dummy content will be removed, so it would be best that you do not edit this content, and use your own content. Periodical website backups are also helpful and should be made.
Basically what a demo does is to use a predefined layout and populate it with content, so you can get an idea about what can be achieved using the theme. All the demo content in located in the theme folder – https://www.screencast.com/t/wxthH5w0q2 and you could use elements from them (homepage, theme panel settings, stylesheet etc) to create your website without actually installing it, if that is what you want.
You could always create your own pages using elements from Visual composer and uniquely personalize them the way you want. Or use one of the available Visual composer page templates – https://www.screencast.com/t/WLELbX1q
The child theme version in the stylesheet does not affect it’s functionality.

Yes, that is what I want, however I don’t see anywhere in documentation of the theme how to do it (other then instructions which doesn’t work at the moment).
Would be great if you could advise how to do it properly in the form of an article or step by step guide and pin it or even attach to the documentation. I’m sure many customers with little knowledge would benefit from this.

Unfortunately there is no tutorial or documentation for installing the demos that way. The demos are meant to be installed through the theme panel automatically. Trying to install a demo by parts could be more difficult then the one click default installation.
Just to get an idea, inside the demo folders you can find the homepage layout for example – https://www.screencast.com/t/BPtQEcII that can be used in Visual composer, the demo css and less files – https://www.screencast.com/t/NAiSRWIjn or the settings from theme panel – https://www.screencast.com/t/A754eoeyLT that are imported when you install a demo. But there are more elements that can not be added in a different way, only by installation process through the import feature.
