I am getting confused about Categories. I can see that when a category is created wordpress creates a category page which is under http://www.websitename.com/category/. I haven’t linked to this page in any way, I have created my own pages with the name of the category and then used tag div composer to list posts from that category on the page. I’m wondering whether I can just ignore the wordpress generated category pages if they aren’t linked to but still exist, or can i delete them in some way so they don’t confuse google. I’m unsure whether this will confuse google if these pages aren’t linked to on the site at all.

I don’t know why you would be creating different pages to display posts from single categories when you could use the actual category pages that are created for this. I don’t know exactly what problems this could lead to concerning Google, you could search online if this affects the website in any way.
The default behavior of WordPress for the categories is for example websitename.com/category/photos and the page would be websitename.com/photos. That should not be a problem.

The category pages at the moment, can only be modified through the theme panel

There are no other options to modify them, unless modifications are made in the actual category template files in the theme
