Just a simple “like” button to show how many users like a post, not the FB like button. I know there are some plugin doing that, but wonder if there is an easier way than using a plugin to achieve that.

Sorry but a plugin is the easier way. Coding is harder than installing a plugin. Try to find one that provides the functionality you are searching for.
