Hi,

That would only be possible my overriding the theme responsive design. That is how the grid will display on mobile devices, with a horizontal scroll. Each element is predefined as to how it will behave in all circumstances.
I could give it a try and provide you a custom code, please specify for what grid type you want this, or provide a link to your website where the grid is present. I can’t promise anything, making modifications to blocks and grids layouts are not recommended.

The site uses your theme, but the blocks are arranged in order, no horizontal scrolling.

As I mentioned before this can be achieved through custom modifications of the element. The grid present in that website is modified to display like that.
By default it looks like in the live demo, with a scroll not vertically

I understand that this is done via additional configuration. but it might be worth it to introduce the theme in the next update?

That is done by customization indeed. Unfortunately there are no plans to make such modifications to the grid responsiveness, as far as I know. You can check other grids, there are many more, some may be by default as you want
