By default, the block is displaying only one category. I’d like to be able to add a second one, and potentially a third one.
Any idea how I can add that? (even if it requires editing the PHP file)

Apologies Bogdan, I’m aware of the filters, but what I mean is that I want to display second (or more) categories ON the post listing of the block.

Sorry but there is no simple way around it. If you do not have coding skills, you will need to hire a freelancer to help out with the customization.
