Every post I make to my new blog goes into every category, even though I have specified which category I want it to be in.
Anyone have any idea how to fix this?

Hi,
That would not be possible. By default in WordPress, if there is no category set for the post it will be placed in the Uncategorized category. If you manually choose categories then the post will be added to them only, not in all the categories.
You can see in which categories a post belongs in the posts screen
