Hello, In the Travel Demo the main menu has categories that show the posts on a slider. I was able to add the pages and categories under them but my posts don’t show up.

I activated the slider and was able to add it to the pages and show categories within them, but I still don’t know how to add it so it appears in the categories in the main menu

The slider can only be added into pages or posts. The category templates cannot be edited with the tagdiv composer so you cannot add shortcodes to them except with custom php code if you are comfortable altering php files. You can use a do_shortcode function:

Is there a way to make the subcategories in the mega menu not arranged in alphabetical order?

Unfortunately, the default order for subcategories displayed in the mega menu is alphabetical. Unfortunately, there is no option to change the categories order, you will need custom modifications for this.
I suggest trying this plugin Category Order and Taxonomy Terms Order as I saw that many users use it to change the categories order.
