When you set the policy page in wp settings, it will appear automatically at the bottom of sign in pop up – https://www.screencast.com/t/wkF5CUaLqW like it is on wordpress login/register page – https://www.screencast.com/t/FVLwO58zp7
The theme sign in/register pop up was designed based on wordpress functionality so we have made also this implementation.
The theme doesn’t collect any data, but we have added some options to help more our customers. For example an option to disable google fonts if it is necessary. Also you can use a GDPR plugin for compliance like WP GDPR Compliance which we have tested or another one like The GDPR Framework if you don’t use an old php version.

@22p We did not test that plugin, you can test it if you want to use it.
@Amit Maybe I am misunderstanding this, you seem to be using theme version 8.7.4. The option was introduced only in 8.7.5
