Using a default category template a background for the category pages can be set in the theme panel, per category settings

A thing to note here is that all the posts that have the category as primary will inherit the background, more about that here

In case you use a cloud category template, a background can be set as well in the per category settings

You can also choose from boxed or full background in this case.

I have used Single Image as an element. Can I stretch it 100% width or should I use some other element?
You can stretch the row containing the single image to full width

Note that it will not stretch if there is a general background set, from what I can see you have a white background color currently. Having a background will make the website boxed, so please remove it

Then the rows will stretch.

One more question: what is the ideal size for that “cover photo” regarding the resolution varieties?
Most monitors these days are full hd, so an image with a width of 1920px would be decent. That will produce good results.
