Is it possible to hide ads (in-line article/top/bottom ads) on posts of certain categories?
Or assign different ads to posts to different posts depending on the category?

By a theme option that would not be possible. Once the ad codes are entered in the theme panel they will be displayed in all posts.
You could use cloud templates for posts, the ad codes can be entered in the template directly in this case. Preview a post template here then edit it

Some users use the Adrotate plugin for more advanced ad capabilities. I believe that plugin has options like you mention. Some more about it here
