Hi,
At the moment we are using your theme on our main site. We are thinking to create a subdomain with the same site (design) but with different content, not testing subdomain, let’s say that now we have 10 categories of News and we want 2 of 10 categories to become sub domains, example health.domain.com, (new WP installation/duplicate the main site and transfer it to the new subdomain, but same theme and design). For that we need new license?

No, you can use the same license as the sub-domains are considered part of the same product. you can use the same license.
