The iframe is resizing because the you have set a sidebar in that post and the content size decrees because of sidebar, also the iframe height is auto set by the width of iframe, what you can do is to set the code in a post without sidebar http://prntscr.com/onamtx in this way the height will be bigger

Please notice that the iframe can set the specific size it need on each device to show good; you can make a test, set the same video embed on both websites and check the differences, also if the differences are big and you want to make adjust to our theme, please provide me the links to your websites where I can check those embed videos and provide to you an working solution.

From what I can see the video on mobile is as with our theme http://prntscr.com/oow0q9 also in desktop the format of video is not 600×600 http://prntscr.com/oow1yw
For more control you can use a custom css.
http://prntscr.com/oow6aa you can set the code in Theme panel>Custom code>Advance code http://prntscr.com/oow6ke in function on the device you want.
but notice that the theme set the size to the video to be show in the best way possible,
