Is there a way to display a default (like when there is no mobile theme) homepage when mobile theme plugin is on?
I would like all posts to be displayed through the mobile theme plugin except only for the homepage and maybe category pages as well. Thanks

The mobile theme homepage will always be displayed when the mobile theme is active, if the homepage is not excluded from the mobile theme however, that can be done like this https://prnt.sc/ubg67n
So you could exclude the homepage from the mobile theme, and display the desktop page instead. The option is available for pages and posts.
The mobile homepage will show a top grid which has these settings https://prnt.sc/ubg4gy
Below that there will be a latest articles section which has these settings https://prnt.sc/ubg4xq
