You can’t change the color of the category on the block for each, you can set only a color for all category form that block. Unfortunately, the theme does not have the option to put a color on the category and apply everywhere on the website.
For filter, you can choose which category display or not display. You can filter by ID what categories/sub-categories will appear => https://www.screencast.com/t/awQpLObuP and you can put the ID in multiple taxonomies filter for adding more categories to display => https://www.screencast.com/t/oGLvEGPuJPu5 -> https://www.screencast.com/t/6GMhwr3d and for to remove a category, add a ‘-’ symbol in front the ID category.

If I understood correctly, you want to filter each module separately, this option is not possible.
The filter is applied to the block/grid. Therefore it will apply all modules from that block.
