I have category pages for my menu. However, I recently tried to change the layout of the category pages and every time I fix one page, it changes the category to appear on all pages. For example, the film content is on ALL my pages instead of just the film page. When I go in to change another category page, then it changes all the category content to the same for every category page. I don’t understand this.

Make sure you change correctly the category template for posts or category from here like this: https://www.screencast.com/t/1J9TCGfJxtch
If you want your category pages to each have a different layout, then you must create individual category cloud templates for every category like in the screenshot above.
