I have an old template in the Cloud Library (used for single posts) and need to find which posts are using that template. Is there a way to see a list of posts that are using a specific single post template?
Conversely, if I remove that template, will the posts that were using it go back to the default template chosen for single posts?

If you remove the template, then your post will have the global template set up by you in the Theme Panel.
