We’ve got Newspaper 11 and want to remove the “author box” at the bottom of each post, and we want to add “show next and previous posts”… but there is no “Post and Custom Post Settings” in the Theme Panel, despite all documents and tutorials referencing it as being there.
Where can we reach those settings?

That is because you are having a custom post template. That is fully editable using tagDiv Composer as you can see here: https://www.screencast.com/t/bmajXr64xJ

We’re not intentionally using a custom post template. This is out-of-the-box and there are no instructions in the documentation on how to get the Post and Custom Post Settings. How do we access the fully editable tagDiv Composer??

Please make sure you have the tagDiv Standard Pack plugin updated and activate from Newspaper plugins => https://www.screencast.com/t/6uPEwLE7u, from version 10.4, this plugin is no longer required because the new demos are using cloud templates.
After you activate the tagDiv Standard Pack plugin, the settings should display https://www.screencast.com/t/31twIOBj
