I wonder if it is possible the filter / sort or select posts that are shown under a category in a mega menu. Similar to the filter in blocks? Alternatively I could create a “parallel” categories” structure just for the post to be shown in the mega menu, though it would be easier having a functionality.

By default this is not possible. What you can do, create a page using tagDiv Composer, set it to have no footer or header: https://www.screencast.com/t/IvhaXJ7NrLzO
In that page, add a Flex block preferably. And set the filters in it: https://www.screencast.com/t/Zn2pza7Z
Then this page can be added in your Mega-Menu in Appearance- Menus.
