Down in the footer to the right I have the following:
Privacy policy
Advertising
Contact us
How do I customize that?

From your dashboard — Appearance-> Menus-> Then choose the footer from the “Select a menu to edit” dropdown menu.

Yes, from the menu editor, edit the footer menu.
