May I know how to custom set the different catergory page layout

You can have different templates. You can duplicate the template and make sure that you have assigned that template for each category.

Is it possible to show different menu on desktop view and mobile view, do you have idea how to make this.
(Due to some items to be added in the mobile view)

Yes, you can have a different menu for mobile: https://i.imgur.com/GfLqDR9.png. You need to select the viewport for your phone, select the menu, and you can change it.
