How could I add the subtitle in Flex Block 5 or 3?
By default I get the caption of the photo that I have been able to remove, but I cannot add the subtitle of the news.

There is no option for the flex block shortcode. But you can create a custom module and add the subtitle with the help of an ACF. Documentation here:
