How can I change the wording to say “email” instead of “username” for when the subscriber logs in? Also how can I change the link in the header to go to My Account instead of posts when the user is logged in?

Hello,
You can translate them from Theme Panel -> Translations -> Translations. It usually should redirected to the My account section, but if you want, you can set here the redirect link https://i.imgur.com/GISExSE.png
