Hi,
In “theme panel” you can easly disable H1 in logo, when editing a page using Composer it seems to be easy, BUT how to do if you edited your page with WpBackery in it?

My header style is 1 in “theme panel”, so I cannot edit it in Composer anyway.

Wp Bakery is deprecated. So, we recommend re-staying your website using cloud templates and can edit the pages with the tagdiv composer.
Please check this option: https://app.screencast.com/ArgH4YjBQPZeC
If you don’t have this option, then you have a very old version that does not allow you to change the headings.
