Via Theme Panel, I can specify a size per AdSense ad and per device. I assume this is also possible if you create a single post template yourself. However, I cannot find this option. I use the single post content item, but in the ad section there, I only see the option Ad margin, but this is not the option that changes the size of the ad.

That isn’t possible for ads inserted with the composer in the post template unfortunately.
Google display ads are responsive by default however, and they should fit nicely in the post content. Normally there’s no more need to choose size for them manually. If you them to have specific sizes you could adjust them in the Adsense settings https://support.google.com/adsense/answer/9274025?hl=en They recommend leaving the responsive version selected.
