Dear sirs,
how do I set up my site http://familie-i-hus.dk not to have the latest post as default start page, but rather a “Newspaper” with an overview of the various posts?

You can select a specific page to become your homepage from the ‘reading’ section under ‘settings’ like so: http://screencast.com/t/6ljQQvrZdWv.
