Is there perhaps some way to display all the tags related to all the articles that rests within that specific category at the top of that category-page?
To use the tags as sort of sub-categories, or sort-options.

Unfortunately the theme does not have that option but you can check this guide to see how it can be done: https://codex.wordpress.org/Function_Reference/the_tags in order to implement such an option.
