As an admin, I know that I can publish on a future date. However, non-admins can’t choose a future date. Is there a setting or plugin that allows me to let non-admins post content and select a future date?

Unfortunately, if you want to change the future date for non-admins, you have to use some plugins with this functionality because our theme does not have such option implemented. We cannot provide a recommendation in this case because we have not tested these kinds of plugins.
