I see that there is a way to limit excerpt length automatically by the number of characters or words in a post. I can do this fine. Thank you.
However… because of the nature of my site and posts, I’d like to manually set the length of my excerpts, such that it cut off with something like “…Read More”
Is there a simple way to achieve this?

If you want to set manually your excerpts, you can do it for each post from Post Editor, like this -> http://screencast.com/t/DFqjFrwg Also, please ensure that you have activated this option from Screen options like this -> http://screencast.com/t/mRCZ9AmQOl9
This is the single way in this regard in our theme. If you want to display more levels in our theme and if you are not aware the steps, please consider hiring a freelancer/developer to implement this for you in our theme because we cannot provide custom services at the moment, sorry!
