Okay, reading over that thread, it seems the only way to do it is choose what layout you want that section to have and make a single file for it. Is there no way to just have the custom post type act as a regular post as such it includes the ability to have the same selections as a normal post type 1-8 etc.

Please let me know, you guys have been fantastic at helping so far, I would personally much prefer to use it as default, but do to the reviews system we use, it is stuck in a custom post type. Any help would be amazing!

Okay, that code worked and got it so all posts where showing. Although implementing that code, seems to give an odd error when in a category or archive section. Once activated posts display, but the menu also seems to show a selection of the posts rather then the categories. See here:
