I was wondering if I can you this theme as a news aggregator, and if so what plugins do you guys recommend.

You sure can. Many do. I often recommend FeedWordPress as I’ve been using it for many years. We have a ‘mothership’ news system, which then feeds various other sites in our network, as well as other syndicators around the world.
