Under ThemePanel->Categories->Category Top Post Style, it is possible to choose a grid to display at the beginning of the category pages. Is it possible to filter what is displayed in this grid? (e.g. by tag slug)

Unfortunately, the theme does not have any such an option for this, sorry! You should try using the Cloud Template Library and create such a custom Category template which can be customized by yourself and as you wish. Using this functionality, please keep in mind that you can create your own custom category template using the TD Composer which allows you to add more elements and functionalities at your page. But this is a template that will be used for all the different tags i have. I know how to filter a block by tag slug or by category. But if I use the block for tags template pages, I don’t know in advance which tag will be select by user. E.g. If the user click on the tag “yellow”, i want to filter article with tag “yellow” but if he click on tag “blue” then i want to filter articles with the tag “blue”. I don’t want to create a different template for each tag… How do I handle this?

Unfortunately, the theme does not have any such an option regarding on Tags which allows that tags to be selected by a user, sorry! It’s just a simple sort order by an existing Tags which should have to be added from Block settings by an editor, like this -> https://www.screencast.com/t/IQQXLoZw

Also, if is not what you mean and if you want more functionality, you should implement it yourself through the code because we cannot provide custom work at the moment, sorry!
