How to create individual blocks with optional author name, cateogry, and date?

Hi everyone,
I am very new to all this. I am trying to have different kinds of modules for various pages. This is what happens:
1) A module with only title and image: I achieved it by turning off everything in the “Meta info on Modules/Blocks” under the “Blocks Settings”.
2) However, not this has become global settings. How do I only selectively turn off/on these options (for the same module)?
Similarly, I need to turn on date, authors name, category names for various blocks.

Please let me know how to do it.

I have somewhat solved the problem with Flex Block 1. However, I cannot make the individual posts the same height. The heights depend on the length of title. Please let me know if there is an option already.

For example: if you go to bbc.com, the 3 posts shown after News, or Sports – they all show the sub-categories in the same vertical location. But in the theme, it depends on the title length.
