I would like to create category pages that each have an introduction about the category in question. So that when people click on the category name, they get a page that has a title, a unique introductory essay, and a list of posts in that category.
Is there a way to do that?
Or, Plan B: Is there a way to create a page or a post that shows a list of posts from a specific category?

That can be achieved by creating Category Pages using the Cloud Library category pages and editing them using the tagDiv Composer.
Import or create one or more category pages, edit the using the tagdiv composer ( you can add text with title or column text element in order to write your introduction ) and after that set the category template to the category page.

So if I want to do this for 20 category pages, I need to create/edit/save 20 separate category templates in the cloud library, and assign one to each category?

Yes, in theme panel you should be able to see al of your categories as you can see here: https://www.screencast.com/t/pwL9hTTUw
You can use only one template for all the categories or only for 10 of them or so on. But the same template will be applied everywhere including the ads in it. So if you choose to use 1 template where you have set the AD X ( for example ) you will have only that ad through all the templates.
