I have been away from working on this website for a while so I’m not sure if theme updates are causing issues or not.
Anyway…
I have created a mobile version of my homepage following the mobile theme update to the theme.
When I view within TagDiv composer – it looks fine.
When I view on my actual mobile as a live site – the page looks completely different.
What’s happening? It just seems to be showing up my latest posts, not the actual page structure with specific content that I’ve chosen to display.
Also, how does a mobile device know to use the mobile version of the page and not the desktop version of the page?

From what you describe it seems you have installed Mobile theme plugin. If you created the mobile pages with TagDiv Composer, then when you install Mobile Theme plugin, your pages will be overwritten by the plugin.
The Mobile Theme is a performance optimized theme included in the Newspaper main theme and it loads only for mobile devices. It comes with its own templates for page, post, category, etc so your current templates from the desktop theme will get converted to the mobile theme layout. Better deactivate the plugin and see the results.
