Hello,
It happens to me from time to time that the DEFAULT SITE POST TEMPLATE option within DEFAULT POST TEMPLATE(site wide) in post settings removes the option I made and puts the default one and changes the way I see the posts

Hello!
Please make sure you use the latest update of the theme(11.4.3) and plugins.
They can not be changed automatically, something interferes there for sure.
Make a test and deactivate ALL plugins except tagDiv ones, also if you are using a cache plugin, deactivate it, clear all cache and try again.
