I read all the posts where people were getting 404 errors and were being told to re-read the instructions…not helpful
The thing that fixed these for me was re-saving my permalinks.

Yep. This is old issue with *all* AMP plugins; where one needs to save permalinks to enable the redirects to the /amp endpoint.
Really should be part of all AMP plugin documentation, but often is not.
