Yes, you can assign the templates here in the theme panel -> https://i.imgur.com/e8PkIYs.png if you have different authors, one for posts and one for cpts.

Will your authors write both posts and property listings? You can assign there an author template for each author.

How I have it set up is that users pay to list their property in the directory. Their information shows up on the property listing page as an author profile. If someone clicks on that author, I want the author page display to be different (showing agency details, other properties, etc) compared to the normal blog post listing template. So any author page link from a property listing CPT needs to open a specific author template.

Unfortunately, there is no option to assign a template only for those who list a property. It has to be set from the theme panel.
