Im using “Big Grid” but the main image (on the left) doesn’t fit portrait images and leave me with ugly white space. “Big Grid 5” fits portrait images perfectly but the large picture is now on the right and doesn’t show the latest image which just looks odd.
How can a make a new Big Grid that has the layout of Big Grid but the sizes of Big Grid 5?

Usually that gray space appear when the image is smaller than the thumb in which it’s displayed, because WordPress won’t enlarge images, only crops them. To avoid that you can use a portrait image at least by the big grid thumb’s size. Also try to regenerate thumbs: https://forum.tagdiv.com/thumbnails-fix-strange-looking-images-on-blocks/
To add a new big grid you can use theme’s API: https://forum.tagdiv.com/td_api_blockadd/ but this is a complex task and requires good coding skills, as you will need a custom css for its layout and depending by your needs maybe a new module. My advice is to look for a developer from sites like: http://studio.envato.com/ to help you with that, as we cannot offer any type of custom work at the moment.
