I’d like to use a bigger logo (300×100 is a bit small) like a banner, because I don’t need ads block. Which is the best way to do that if possible ?

You can make the logo to be bigger, but from code.
You have to delete the ads section from logo_ad.php file and than from css you can make a bigger logo. We are working on an update to let you use full width logos.
So how can I use a bigger banner logo instead of this small one?
I do not want the ad next to the logo (at the moment)
Where is this “logo_ad.php file” located?

That file is located in parts/header folder.
If you want you can use Header style 3(from Theme customizer) this have a full width center logo + AD
