Is there any way in a block to have it show posts only from BEFORE a specific date, or something like that. So for instance, if I wanted a block on my homepage to show random posts from BEFORE July 2015, is there a way I can do that?

Unfortunately there is no such option in the theme. These are the only sorting options available at the moment: http://screencast.com/t/z7s4T2rdlZ
In order to create a new sorting option you will need to edit the theme files. Here is an example of how to create a new sorting option: https://forum.tagdiv.com/topic/implemented-new-sort-most-popular-among-posts-of-last-7-days/
It will require PHP knowledge. If you cannot do it yourself, we recommend hiring a developer to help out from sites like studio.envato.com
