I Want to enable AMP in few categories, though it is written in the AMP tutorial that we can enable disable AMP in categories. But I didn’t see any option. Can anyone help me out here.

Hello!
Please make sure you have those settings: https://www.screencast.com/t/nw8P9nJVHa and also the categories you need selected.
After that, you should be able to see that option AMP enable/disable when you edit normally the category in the Gutenberg editor.
Also, please make sure you have the AMP plugin installed and active.
