So for instance, I have a header called ‘Creative’ and posts that are tagged and categorised as ‘creative’ but it tends to just show what it wants.
How do I change this?

Please provide more details about the issue, and what exactly you are trying to achieve so we can help understand better.
If you want the blocks or grids to display posts that you want from specific categories, that can be done for each element.
