I want to know what terms people search on in the searchbox on the website.

Might be with a plugin. Not part of theme as searches are done by WordPress script, not theme.
Might check plugins in the wordpress.org repository.

Ok, plugin ‘search meter’ did the trick!

If you use analytics you can track search queries too
