When organizing categories i fucked up, I want to go back to the old categories hierarchy

Unfortunately, I do not exactly understand what you mean. Which is an older category hierarchy? Please provide more details about what you want to achieve, also you can provide some useful screenshots on what your website is now and how do your want to look? I need to know more details about this, so I will be able to provide a more accurate response/code.

Theme does not control categories; those are managed by WordPress.

To manage categories, et al, in the menus that is managed in the menus panel.
If you “deleted” things you might want to go to your backup prior to the change.
If you don’t make backups, this might be good learning experience as to why they are useful.
