We want to change the background color of the category labels that appears in the list of the various blocks (ex: block 11)
It is currently black for all categories
How can we do that?

No, in blocks that is not possible unfortunately. A color for the category tag of each category can be set in the theme panel https://prnt.sc/_kHwcTQ0GJvj but that will appear only in the post pages https://prnt.sc/Y2SJsTUhLGbq
So in blocks you could only change the default color of all the category tags at once, but not per category.
