First, to customize the font properties of the tags you can use the theme panel, as a general setting

Or in the tagDiv composer per block and per module even, example

For the styling some CSS could be used, maybe something like this

Per actual category would be somewhat more difficult with CSS, this code will apply to all the category tags. It could be made more precise, similar topic here

I will try to help you with the more articles box. I see that the example you mention has no thumbnail for the posts. There are a couple of modules that don’t show a thumbnail

But those don’t show excerpts however. You could select a module with excerpts and hide the thumbnail
